Microbiological risk assessment (MRA) is a structured, four-step scientific process used to evaluate the public health impact of biological hazards (pathogens/toxins) in food. It involves hazard identification, hazard characterization, exposure assessment, and risk characterization, shifting food safety from reactive to proactive, risk-based management. This process helps quantify risks, often using models to simulate pathogen behavior from production to consumption.
